Mario Bevilaqua came to the University of Scranton Small Business Development Center (SBDC) in 2010, looking for assistance to start a mobile food truck business. After attending a First Step seminar and going through the initial information on starting a business and preparing a business plan, Bevilaqua decided to put the project on hold.

In the spring of 2012, Bevilaqua returned to the SBDC to move forward with his project. The SBDC assisted him in obtaining the PA Department of Agriculture regulations on running a mobile food business. From there, the SBDC assisted Bevilaqua in figuring out his total project cost in order to obtain financing for the project. The center then advised him on preparing his financials and business plan information for his loan package.

Since then, the SBDC has continued to work with Bevilaqua on his internet marketing and social media marketing efforts. Bevilaqua opened What the Fork Food Truck by obtaining financing in the amount of $71,000 and created six jobs. With the help of the SBDC, Bevilaqua also obtained ServSafe Certification and Quickbooks training, and planned expansion to a second truck.
